Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon instant yeast
  • 3/4 cup warm milk
  • 3 tablespoons unsalted butter, softened
  • 1 1/2 cups milk
  • 3 tablespoons cornstarch
  • 1/4 cup granulated sugar
  • 2 egg yolks
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 tablespoon milk

Instructions

  1. In a bowl, mix flour, sugar, salt, and yeast. Add warm milk and butter, then knead for 8–10 minutes until smooth. Cover and let rise for 1 hour.
  2. In a saucepan, whisk milk, sugar, and cornstarch. Heat until thickened. Temper egg yolks, return to heat, cook until creamy, then stir in butter and vanilla. Cool completely.
  3. Roll dough into a rectangle and cut into triangles.
  4. Place custard at the base of each triangle and roll into croissant shapes.
  5. Place on a lined tray, cover, and let rise for 20–30 minutes.
  6. Preheat oven to 180°C (350°F). Brush croissants with egg wash.
  7. Bake for 15–20 minutes until golden brown. Cool slightly before serving.

Notes

  • Do not overfill to prevent leaking.
  • Custard must be fully cooled before use.
  • Add citrus zest or chocolate for variation.
  • Best enjoyed warm.
  • Reheat in oven to maintain texture.
