Ingredients
2 1/4 cups all-purpose flour
2 tablespoons granulated sugar
1 teaspoon salt
1 tablespoon instant yeast
3/4 cup warm milk
3 tablespoons unsalted butter, softened
1 1/2 cups milk
3 tablespoons cornstarch
1/4 cup granulated sugar
2 egg yolks
1 tablespoon butter
1 teaspoon vanilla extract
1 egg
1 tablespoon milk
Instructions
In a bowl, mix flour, sugar, salt, and yeast. Add warm milk and butter, then knead for 8–10 minutes until smooth. Cover and let rise for 1 hour.
In a saucepan, whisk milk, sugar, and cornstarch. Heat until thickened. Temper egg yolks, return to heat, cook until creamy, then stir in butter and vanilla. Cool completely.
Roll dough into a rectangle and cut into triangles.
Place custard at the base of each triangle and roll into croissant shapes.
Place on a lined tray, cover, and let rise for 20–30 minutes.
Preheat oven to 180°C (350°F). Brush croissants with egg wash.
Bake for 15–20 minutes until golden brown. Cool slightly before serving.
