Ingredients

  • 8 tablespoons unsalted butter
  • 20 ounces large marshmallows
  • 1/4 cup freshly brewed espresso, cooled slightly
  • 3 tablespoons non-alcoholic Irish cream–style syrup or cream flavoring
  • 1 teaspoon vanilla extract
  • 3 to 4 cups puffed brown rice cereal

Instructions

  1. Line an 8×8-inch square baking dish with parchment paper and lightly grease it. Set aside.
  2. In a medium saucepan over medium-low heat, melt the butter. Cook, stirring occasionally, until the butter is golden brown and smells nutty (about 3–6 minutes). Watch carefully to avoid burning.
  3. Remove the pan from heat briefly and stir in the espresso and Irish cream–style flavoring. Return to low heat.
  4. Add the marshmallows gradually, stirring continuously until melted and smooth.
  5. Remove from heat and stir in vanilla extract.
  6. Add the puffed brown rice cereal and gently fold until evenly coated.
  7. Transfer the mixture to the prepared pan. Use a greased spatula or hands to press it into an even layer without packing too tightly.
  8. Let cool at room temperature for about 30 minutes, then cut into squares and serve.
