Ingredients

  • 3 cups frozen shredded hash brown potatoes
  • ¾ cup shredded Monterey Jack cheese (or another melting cheese)
  • ¼ cup chopped green onions
  • 4 large eggs, beaten
  • 1 (12-fluid ounce) can evaporated milk (or about 1½ cups regular milk)
  • ⅛ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a 2-quart casserole dish.
  3. Spread the frozen hash brown potatoes evenly across the bottom of the dish.
  4. Sprinkle the shredded cheese over the hash browns, then add the chopped green onions.
  5. In a medium bowl, whisk together the eggs, evaporated milk, salt, and pepper until smooth.
  6. Pour the egg mixture evenly over the potatoes, cheese, and onions.
  7. Bake for 40–45 minutes, or until the center is set and a knife inserted comes out clean.
  8. Let the casserole rest for 5 minutes before slicing and serving.
