Ingredients

  • 1 cup pure maple syrup
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter

Instructions

  1. Line an 8×8-inch pan with parchment paper, leaving overhang for easy removal.
  2. In a medium saucepan, combine maple syrup, heavy cream, and butter over medium heat. Stir until butter melts and mixture is combined.
  3. Bring to a boil. Once boiling, stop stirring and let it cook for 10–12 minutes until slightly thickened and it reaches soft-ball stage.
  4. Remove from heat and let sit for 10 minutes.
  5. Beat vigorously with a wooden spoon or spatula until mixture thickens, lightens in color, and loses its gloss.
  6. Pour into prepared pan, spread evenly, and let cool at room temperature until set.
  7. Cut into squares and serve.

Notes

  • Add a pinch of salt for a salted maple flavor.
  • Stir in a bit of vanilla extract for added depth before pouring into the pan.
  • Cook slightly longer for a firmer fudge, but avoid overcooking.
  • Let the fudge cool before beating for best texture.
  • Use only pure maple syrup—pancake syrup won’t work.
