Ingredients

  • Non-stick cooking spray
  • 1 (13.2-oz) box no-boil lasagna noodles
  • 2 large carrots, chopped
  • 1 stalk celery, chopped
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 lb (450 g) ground beef (or turkey/lamb)
  • 1 (28-oz) can crushed tomatoes
  • 1 (15-oz) can tomato sauce
  • 1 tsp dried oregano
  • ½ tsp dried basil
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups béchamel sauce

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a skillet, sauté carrots, celery, and onion for 5–7 minutes until soft. Add garlic and cook for 1 minute more.
  3. Add ground beef, oregano, basil, salt, and pepper. Cook until browned.
  4. Stir in crushed tomatoes and tomato sauce. Simmer for 15 minutes until thickened.
  5. Spread a thin layer of sauce in the bottom of the baking dish. Add a layer of noodles, sauce, béchamel, mozzarella, and Parmesan. Repeat layers.
  6. Finish with sauce and cheese on top. Cover with foil and bake for 40 minutes. Uncover and bake an additional 10–15 minutes until bubbling and golden.
  7. Let rest for 10 minutes before slicing and serving.

Notes

  • To make ahead, assemble the lasagna and refrigerate overnight. Bake as directed when ready.
  • For a vegetarian version, replace meat with mushrooms, lentils, or sautéed vegetables.
  • Letting the lasagna rest helps it set and makes for cleaner slices.
