Ingredients

  • 1 tablespoon date molasses (optional)
  • Extra chopped pecans for coating

Instructions

  1. For Coconut Truffles: In a bowl, mix coconut flour, oat flour, grated coconut, honey, coconut milk, salt, and optional lime zest until a cohesive dough forms.
  2. For Pistachio Cranberry Truffles: Mix pistachio butter, date molasses, oat flour, and cardamom until smooth.
  3. For Date Pecan Truffles: Blend dates, pecans, cinnamon, salt, and optional molasses in a food processor until a sticky mixture forms.
  4. With damp hands, roll each mixture into bite-sized balls.
  5. Roll coconut truffles in grated coconut, pistachio truffles in diced cranberries, and date pecan truffles in chopped pecans.
