Ingredients

For the Fettuccine Alfredo:

12 ounces fettuccine (uncooked)

6 tablespoons butter (unsalted)

3 cloves garlic (minced)

¼ teaspoon salt (or to taste)

¼ teaspoon black pepper (or to taste)

½ teaspoon dried oregano

2 cups heavy cream

2 cups Parmesan cheese (grated)

¼ teaspoon red pepper flakes

Instructions

  1. Bring a large pot of salted water to a boil. Cook the fettuccine according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet, melt butter over medium-high heat. Add garlic and cook for 30 seconds, then season with salt, pepper, and oregano.
  3. Pour in the heavy cream, stirring constantly, and bring it to a boil. Reduce heat and simmer for 5 minutes.
  4. Whisk in the grated Parmesan cheese until the sauce becomes smooth and creamy.
  5. Add the cooked fettuccine to the skillet, tossing it to coat in the sauce. Add reserved pasta water if the sauce is too thick.
  6. Garnish with extra Parmesan cheese and red pepper flakes. Serve immediately.

Notes

  • For a richer flavor, add grilled chicken, shrimp, or salmon to the dish.
  • If the sauce is too thin, add more Parmesan cheese to thicken it.
  • This dish is best served immediately, but can be reheated gently on the stovetop with a little splash of cream or milk to keep the sauce smooth.
