Ingredients

  • 20 buttery crackers, broken into quarters
  • 1 cup slivered almonds (110 g)
  • 1 cup corn flakes (33 g)
  • 1/2 cup glacé cherries, halved (100 g)
  • 1/3 cup dried cranberries (50 g)
  • 140 g unsalted butter
  • 3/4 cup brown sugar (150 g)
  • 1 tablespoon honey
  • 1 teaspoon finely grated orange zest (optional)
  • 1/4 teaspoon salt
  • 125 g dark chocolate

Instructions

  1. Preheat oven to 180°C (350°F). Lightly grease and line a 23 x 30 cm baking pan with baking paper.
  2. Scatter broken crackers evenly over the base in a single layer.
  3. Sprinkle slivered almonds, corn flakes, glacé cherries, and cranberries evenly over the crackers.
  4. In a saucepan over medium heat, combine butter, brown sugar, and honey. Stir until melted and smooth.
  5. Bring mixture to a gentle simmer and bubble for 2 minutes. Remove from heat, stir in orange zest and salt.
  6. Carefully drizzle hot toffee mixture over the pan contents. It won’t fully cover but will spread as it bakes.
  7. Bake for 12–14 minutes, until bubbling and golden. Remove from oven.
  8. Melt dark chocolate and drizzle over the hot slice.
  9. Cool at room temperature for 30 minutes, then chill until fully set.
  10. Once set, cut into slices and serve.

  • Don’t worry if the toffee doesn’t fully cover—heat will help spread it while baking.
  • Customize with different nuts or dried fruits to your taste.
  • Let the slice fully cool and set before cutting for clean edges.
  • Store in fridge or freeze in layers for longer storage.
