Ingredients

  • 1 loaf crusty bread (sourdough or French baguette), sliced into 3/4-inch pieces
  • 8 oz fresh mushrooms (white button, cremini, or baby bella), sliced
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 1/4 cup shredded gouda cheese
  • 1/4 cup finely grated Parmesan cheese
  • Fresh parsley, finely chopped, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a skillet over medium heat. Add sliced mushrooms, garlic powder, thyme, salt, and pepper. Sauté 5–7 minutes until softened and lightly browned. Remove from heat.
  3. In a bowl, combine cream cheese, mozzarella, gouda, and Parmesan until smooth.
  4. Arrange bread slices on a baking sheet and toast for 5 minutes until lightly crisped.
  5. Spread cheese mixture evenly on toasted bread slices. Top each with sautéed mushrooms.
  6. Bake for 10–12 minutes, until cheese is melted, bubbling, and golden around the edges.
  7. Remove from oven, garnish with fresh parsley, and serve warm.

Notes

  • Pre-toasting the bread helps prevent sogginess.
  • Mix different mushrooms like shiitake or oyster for more depth of flavor.
  • Mascarpone or ricotta can replace cream cheese for variation.
  • For a gourmet touch, drizzle with truffle oil or balsamic glaze before serving.
  • Best served fresh — avoid freezing as texture may suffer.
