Ingredients

  • 500 g ground beef
  • 300 g dry pasta (penne or fusilli)
  • 3 large yellow onions, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 0.5 cup shredded cheddar cheese
  • 0.5 cup grated cheese suitable for baking
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 180°C.
  2. Cook the pasta in salted boiling water until just al dente, then drain and set aside.
  3. Heat olive oil and butter in a large skillet over medium heat. Add onions and cook for 20–25 minutes until deeply caramelized.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Move onions aside and add ground beef. Cook for 6–8 minutes until browned.
  6. Sprinkle flour over the mixture, stir well, and cook for 1 minute.
  7. Gradually add beef broth while stirring, then add soy sauce, thyme, salt, and black pepper.
  8. Simmer for 5 minutes until the sauce thickens slightly.
  9. Add cooked pasta and mix until evenly coated.
  10. Transfer to a greased baking dish and spread evenly.
  11. Top with mozzarella, cheddar, and grated baking cheese.
  12. Bake uncovered for 20–25 minutes until cheese is melted and lightly golden.
  13. Rest for 5 minutes before serving and garnish with parsley if desired.
