Instructions

  1. Heat butter and olive oil in a skillet over medium-low heat. Add sliced onions, salt, and pepper. Cook for 30–40 minutes, stirring occasionally, until deeply caramelized.
  2. While onions cook, rinse the rice. In a saucepan, combine rice and chicken broth. Bring to a boil, reduce to low, cover, and simmer for 15 minutes. Remove from heat and fluff with a fork.
  3. In a large bowl, mix cooked rice, chicken, cream, garlic powder, thyme, tarragon (if using), spinach (if using), salt, and pepper until combined.
  4. Transfer the rice mixture to a greased 9×13-inch baking dish. Spread caramelized onions on top and sprinkle with shredded cheese.
  5. Preheat oven to 375°F (190°C). Bake uncovered for 20–25 minutes, until cheese is melted and bubbly. Broil for 1–2 minutes if desired for a golden crust.
  6. Let the casserole rest for 5–10 minutes before serving. Garnish with herbs if desired.
