Ingredients

  • All-purpose flour: 300 g
  • Granulated sugar: 80 g
  • Milk: 250 ml
  • Egg: 1 large
  • Baking powder: 12 g
  • Lemon zest: 1 teaspoon
  • Neutral frying oil (sunflower or canola): 1 liter
  • Granulated sugar for coating: 100 g

Instructions

  1. In a large bowl, mix flour, sugar, and baking powder.
  2. Add egg, milk, and lemon zest. Whisk until a smooth, thick batter forms.
  3. Cover and let the batter rest at room temperature for 15 minutes.
  4. Heat oil in a deep pot to 170°C (340°F).
  5. Using two spoons, drop small portions of batter into the hot oil without overcrowding.
  6. Fry for 2–3 minutes, turning until golden brown.
  7. Remove with a slotted spoon and drain on paper towels.
  8. While warm, roll the fritters in granulated sugar to coat.
  9. Serve immediately for the best taste and texture.

  • Fry in small batches to maintain oil temperature.
