Ingredients

  • 1 1/2 cups cottage cheese (preferably full-fat)
  • 2 tablespoons honey
  • 2 tablespoons peanut butter
  • 1/3 cup chocolate chips, melted
  • 1/3 cup granola

Instructions

  1. In a blender or food processor, combine cottage cheese, honey, and peanut butter. Blend until smooth and creamy.
  2. Line a rimmed baking sheet with parchment paper. Pour the mixture onto the sheet and spread into an even layer about 1/4 inch thick.
  3. Drizzle melted chocolate in dollops over the top and swirl using a knife or toothpick.
  4. Sprinkle granola evenly over the surface.
  5. Place in the freezer for at least 3 hours, or until completely firm.
  6. Once frozen, break or cut into 16–20 pieces. Serve immediately or store in the freezer for later.
