Ingredients

  • 1 cup all-purpose flour (for crumb topping)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar (for crumb topping)
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 1/2 cup unsalted butter, melted (for crumb topping)
  • 1/2 cup rainbow sprinkles (for crumb topping)
  • 1 1/2 cups all-purpose flour (for cake)
  • 3/4 cup granulated sugar (for cake)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt (for cake)
  • 1/2 cup unsalted butter, melted and cooled (for cake)
  • 1/2 cup sour cream or Greek yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup milk
  • 1/2 cup rainbow sprinkles (for cake)
  • 1/2 cup powdered sugar (for optional glaze)
  • 1 to 2 tablespoons milk (for glaze)
  • Splash of vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch baking pan.
  2. Make the crumb topping: In a bowl, mix flour, brown sugar, granulated sugar, cinnamon, and salt. Stir in melted butter until crumbly. Fold in sprinkles and set aside.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt for the cake.
  4. In another bowl, mix melted butter, sour cream, eggs, vanilla, and milk until smooth.
  5. Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
  6. Gently fold in the sprinkles.
  7. Spread the batter evenly in the prepared pan.
  8. Sprinkle the crumb topping evenly over the batter without pressing it down.
  9. Bake for 40 to 45 minutes, or until a toothpick inserted in the center comes out clean.
  10. If using glaze, whisk powdered sugar, milk, and vanilla until smooth and drizzle over cooled cake.

Notes

  • Let melted butter cool slightly before making crumb topping to avoid melting the crumbs.
  • Use jimmies-style sprinkles to prevent color bleeding in the batter.
  • Double the crumb topping for a bakery-style thick layer.
  • Optional glaze adds sweetness but is not required for a delicious cake.
