Ingredients

  • 5 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear the chicken thighs skin-side down for about 5–6 minutes until golden brown.
  5. Flip the chicken, then add butter to the pan. Once melted, stir in minced garlic and cook for 30 seconds.
  6. Transfer the skillet to the oven and bake for 30–35 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Remove from oven, spoon garlic butter over the chicken, and garnish with parsley.

Notes

  • For boneless, skinless thighs, reduce baking time to around 20 minutes.
  • Use a cast-iron or oven-safe skillet to go from stovetop to oven seamlessly.
  • Add lemon juice or Parmesan for extra flavor variations.
