Ingredients

  • For the Lobster Filling:
    • 300 g cooked lobster meat, chopped
    • 2 tbsp butter
    • 2 cloves garlic, minced
    • 2 tbsp cream cheese
    • 3 tbsp mayonnaise
    • 1 tbsp lemon juice
    • 1 tsp paprika
    • 1 tbsp chopped parsley
    • Salt and pepper to taste
  • For the Biscuits (Quick Method):
    • 1 can refrigerated biscuit dough (8 pieces)
  • For the Biscuits (Homemade):
    • 2 cups flour
    • 1 tbsp baking powder
    • ½ tsp salt
    • 6 tbsp cold butter
    • ¾ cup cold milk or buttermilk
  • For the Garlic Butter Brushing:
    • 4 tbsp melted butter
    • 2 cloves garlic, grated
    • 1 tbsp fresh parsley
    • Pinch of paprika

Instructions

  1. Prepare the Lobster Filling: In a pan, melt 2 tbsp butter over medium heat. Add minced garlic and sauté for 30 seconds. Stir in cream cheese, mayonnaise, lemon juice, paprika, salt, and pepper. Mix until smooth. Fold in chopped lobster and parsley. Remove from heat and let cool.
  2. Prepare the Biscuit Dough: (Skip if using canned) In a bowl, whisk flour, baking powder, and salt. Cut in cold butter until crumbly. Stir in milk to form a dough. Gently knead and shape into 8–10 biscuits.
  3. Assemble the Biscuits: Flatten each biscuit. Place 1–2 tbsp of lobster filling in the center. Fold dough around the filling and pinch to seal. Place seam-side down on a parchment-lined tray.
  4. Brush with Garlic Butter: Mix melted butter with grated garlic, parsley, and paprika. Brush biscuits lightly before baking.
  5. Bake: Preheat oven to 200°C (400°F). Bake for 15–18 minutes or until golden brown.
  6. Finish: Brush with remaining garlic butter and sprinkle with fresh parsley or a pinch of paprika. Serve warm.

Notes

  • Use canned biscuit dough for a time-saving shortcut.
  • Ensure lobster is fully cooked and drained of moisture before mixing.
  • Seal biscuits tightly to prevent filling from leaking during baking.
  • Don’t overbake — check for golden tops and firm bases.
