Ingredients

  • 1 1/2 cups mashed ripe bananas
  • 3/4 cup soft brown sugar
  • 1/3 cup mild-flavor olive oil
  • 1/4 cup unsulphured molasses
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • Gingerbread Spices:
  • 2 1/2 teaspoons cinnamon
  • 2 teaspoons ginger
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat oven to 350°F (180°C). Line a 9×5-inch loaf pan with parchment paper and lightly oil it.
  2. In a large bowl, mash bananas until smooth and runny.
  3. Whisk in brown sugar, olive oil, molasses, vanilla, salt, cinnamon, ginger, allspice, and nutmeg until well combined.
  4. Add flour, baking powder, and baking soda. Fold in gently with a spatula until just combined and smooth.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean. Tent with foil after 30 minutes if browning too quickly.
  7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely for at least 2 hours before slicing.
