Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup dark brown sugar
  • 1/2 cup vegetable oil
  • 1/2 cup plain Greek yogurt
  • 1 large egg
  • 1 large egg yolk
  • 1/4 cup molasses
  • 2 teaspoons vanilla extract
  • 1 ounce cream cheese, softened
  • 1 1/4 cups powdered sugar
  • 2 to 3 tablespoons half and half
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

  1. Preheat oven to 350°F (175°C) and spray a mini muffin tin with nonstick spray.
  2. In a large bowl, whisk together brown sugar, oil, Greek yogurt, egg, egg yolk, molasses, and vanilla until smooth.
  3. In a separate bowl, whisk together flour, cinnamon, ginger, allspice, cloves, nutmeg, baking soda, baking powder, and salt.
  4. Fold dry ingredients into wet ingredients until just combined. Do not overmix.
  5. Fill each mini muffin cup about 3/4 full with batter.
  6. Bake for 10 to 11 minutes, until tops are set and spring back when lightly pressed.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. To make the glaze, whisk cream cheese, powdered sugar, 2 tablespoons of half and half, vanilla, and a pinch of salt until smooth. Add more half and half as needed for consistency.
  9. Dip cooled gingerbread bites into the glaze and place back on the rack to set.
