Ingredients
3 medium red onions (about 600 g), peeled and cut into wedges
50 g unsalted butter (1/4 cup)
2 tablespoons honey
2 tablespoons balsamic vinegar
3–4 fresh thyme sprigs, leaves only
200 g fresh goat cheese, sliced (7 oz)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
250 g ready-rolled puff pastry (9 oz)
Instructions
Preheat oven to 350°F (180°C).
Melt butter in a 9-inch (23 cm) ovenproof skillet over medium heat. Add onion wedges and cook 5 minutes until slightly softened.
Drizzle honey and balsamic vinegar over onions. Cook another 5 minutes until glossy and lightly caramelized.
Arrange onions cut-side down in an attractive pattern. Sprinkle with thyme, salt, and pepper.
Remove from heat and let cool slightly. Arrange goat cheese slices evenly over onions.
Place puff pastry over the skillet, tucking edges inside. Cut two small slits in the center for steam.
Bake 20–25 minutes until pastry is puffed and golden brown.
Rest 5 minutes, then carefully invert onto a serving plate. Serve warm or slightly lukewarm.
