Ingredients

  • ¼ cup Korean gochujang (mild or hot)
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 teaspoon honey or sugar (optional)
  • Juice from ½ lime (about 1 tablespoon)
  • 2 cloves garlic, minced (optional)
  • 8 ounces noodles (rice, flour, egg, ramen, or udon)
  • 1 tablespoon vegetable oil
  • 1 large bell pepper, chopped
  • 34 spicy chilies (such as jalapeños or serranos), chopped
  • Fresh chopped scallions (for garnish)
  • Toasted sesame seeds (for garnish)
  • Red pepper flakes (for garnish)
  • Lime wedges (for garnish)

Instructions

  1. In a small bowl, whisk together gochujang, soy sauce, sesame oil, honey (or sugar), lime juice, and minced garlic until smooth. Set aside.
  2. Cook the noodles according to package instructions, usually 4–5 minutes. Drain and toss with a little oil to prevent sticking.
  3. Heat vegetable oil in a wok or large skillet over medium heat. Add bell pepper and chilies; stir-fry for about 5 minutes until softened.
  4. Add the cooked noodles to the pan and stir-fry for 1 minute. Pour in the prepared sauce and toss to coat evenly.
  5. Transfer to serving bowls. Garnish with scallions, sesame seeds, red pepper flakes, and a squeeze of lime. Serve hot.
