Ingredients

  • 1½ cups golden waffle mix
  • 1 cup full cream milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted (plus extra for greasing waffle iron)
  • 1 ripe banana, sliced
  • ½ cup fresh blueberries
  • ½ cup fresh strawberries, hulled and halved
  • 1 tablespoon honey, for drizzling

Instructions

  1. In a large mixing bowl, combine waffle mix, milk, egg, and melted butter. Whisk until smooth. Let the batter rest for 2–3 minutes.
  2. Preheat your waffle iron according to manufacturer instructions. Lightly grease with butter or non-stick spray.
  3. Pour ½ to ⅔ cup of batter into the center of the waffle iron (adjust based on waffle maker size). Close the lid and cook for 3–5 minutes, or until golden brown and crisp.
  4. Remove the waffle and repeat with remaining batter.
  5. While waffles cook, rinse and prepare the fresh fruit: slice banana, hull and halve strawberries, and rinse blueberries.
  6. Top warm waffles with banana slices, strawberries, and blueberries. Drizzle with honey and add any optional toppings.
  7. Serve immediately while waffles are hot and crisp.
