Ingredients

  • For the salmon:
    • 4 salmon fillets (about 6 oz each)
    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice
    • 1 teaspoon dried oregano
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
  • For the garlic yogurt sauce:
    • 1 cup Greek yogurt
    • 1 garlic clove, minced
    • 1 tablespoon olive oil
    • 1 tablespoon lemon juice
    • 1 tablespoon fresh dill or parsley, finely chopped
    • Pinch of salt
    • Pinch of black pepper
  • For the wraps:
    • 4 large whole wheat or flour tortillas
    • 1 cup shredded lettuce
    • 1 cup cucumber, diced
    • 1 cup cherry tomatoes, halved
    • 1/4 red onion, thinly sliced
    • 1/2 cup feta cheese, crumbled

Instructions

  1. Heat a skillet over medium heat and add olive oil. Season salmon with oregano, salt, and pepper.
  2. Cook salmon for 4–5 minutes per side, until cooked through and flaky. Drizzle with lemon juice and set aside.
  3. In a bowl, mix Greek yogurt, garlic, olive oil, lemon juice, dill or parsley, salt, and pepper. Chill until ready to use.
  4. Warm tortillas in a dry skillet or microwave. Spread a spoonful of yogurt sauce on each tortilla.
  5. Add lettuce, cucumber, cherry tomatoes, and red onion. Place one salmon fillet on each wrap and top with crumbled feta.
  6. Roll or fold the wraps, slice in half if desired, and serve with extra yogurt sauce.
