Ingredients

  • 1 lb wild salmon fillet, skin on
  • 2 tablespoons green harissa paste
  • Zest of 1/2 lemon
  • 4 lemon wedges, for serving
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon raw sugar

Instructions

  1. Preheat oven to 400°F and line a baking sheet with foil.
  2. Cut salmon into 4 equal pieces and place on the baking sheet. Season with kosher salt.
  3. Spread green harissa paste over the top of each salmon piece and sprinkle with lemon zest.
  4. Bake for 10–12 minutes, until salmon is just opaque and flakes easily.
  5. Switch oven to broil. Sprinkle raw sugar over salmon tops.
  6. Broil for 2–4 minutes, watching closely, until lightly caramelized.
  7. Remove from oven and serve immediately with lemon wedges.

Notes

  • Use mild or spicy green harissa to control heat level.
  • Red harissa can be used for a smokier flavor.
  • Drizzle with olive oil and fresh herbs before serving for added freshness.
  • Best served fresh but can be prepped ahead of time.
