Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 large ripe tomatoes, diced
  • 1/2 small red onion, finely diced
  • 1/4 cup fresh basil, chopped
  • 1 tbsp balsamic vinegar
  • 1 clove garlic, minced
  • 1 tsp dried oregano or Italian seasoning (optional)

Instructions

  1. In a medium bowl, combine the diced tomatoes, red onion, fresh basil, balsamic vinegar, minced garlic, and a pinch of salt and pepper. Mix gently and let the mixture marinate while you prepare the chicken.
  2. Brush the chicken breasts with olive oil. Season both sides with salt, pepper, and oregano or Italian seasoning if desired.
  3. Heat a grill pan or outdoor grill over medium-high heat. Grill the chicken for 6–7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  4. Place each grilled chicken breast on a serving plate and spoon a generous amount of the tomato bruschetta mixture on top.
  5. Serve immediately. Add extra fresh basil on top if desired.
