Ingredients

  • 1 lb (450 g) boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 cup fresh pineapple chunks
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp honey or brown sugar
  • 1 tbsp lime juice
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • Salt, to taste
  • Skewers (soaked in water if wooden)

Instructions

  1. In a medium bowl, whisk together olive oil, soy sauce, honey (or brown sugar), lime juice, minced garlic, smoked paprika, salt, and black pepper to make the marinade.
  2. Add chicken pieces to the marinade and mix until well coated. Cover and refrigerate for 30 minutes to 2 hours.
  3. Thread marinated chicken and pineapple chunks alternately onto soaked skewers.
  4. Preheat grill or grill pan to medium-high heat. Lightly oil the grates.
  5. Grill the kebabs for 10–12 minutes, turning every 2–3 minutes, until the chicken is fully cooked and slightly charred.
  6. Remove from heat and let rest for a few minutes. Serve warm with optional lime wedges or chopped herbs.

  • Use fresh pineapple for best caramelization and flavor.
  • Don’t marinate chicken longer than 4 hours to avoid a mushy texture.
