Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, sliced
  • 1 tsp oregano
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1/4 cup feta cheese, crumbled
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic; sauté until softened, about 2–3 minutes.
  2. Add ground beef and cook until browned, breaking it up with a spoon, about 5–6 minutes.
  3. Stir in bell pepper, zucchini, and cherry tomatoes. Cook for 5–7 minutes until vegetables are just tender.
  4. Add oregano, cumin, paprika, salt, and pepper. Mix thoroughly.
  5. Stir in sliced olives and cook for 2 more minutes.
  6. Remove from heat and top with crumbled feta cheese and fresh parsley.
  7. Serve warm on its own or with rice, quinoa, or pita bread.
