Ingredients

  • 1 1/2 cups basmati rice
  • 2 tablespoons olive oil
  • 1 lb lean ground beef
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 medium onion, finely chopped
  • 2 garlic cloves, finely minced
  • 2 teaspoons baharat spice blend
  • 2 1/4 cups chicken broth
  • 2 tablespoons butter
  • 2 tablespoons pine nuts and slivered almonds
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Drain well and set aside.
  2. Heat olive oil in a large pot over medium-high heat. Add the ground beef, salt, and black pepper and cook for 7–10 minutes, stirring occasionally, until fully browned.
  3. Add the chopped onion, minced garlic, and baharat spice blend. Cook for 2–3 minutes until fragrant and the onion softens.
  4. Add the rinsed rice and stir gently to coat the grains with the seasoned meat mixture.
  5. Pour in the chicken broth and stir to distribute the ingredients evenly.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover with a tight-fitting lid and simmer for 20–25 minutes until the rice is tender and the liquid is absorbed.
  7. Meanwhile, melt the butter in a small pan over medium heat. Add the pine nuts and slivered almonds and toast for 1–2 minutes until lightly golden.
  8. Once the rice is cooked, remove the pot from heat and let it rest covered for 5–10 minutes.
  9. Fluff the rice gently with a fork and garnish with toasted nuts and chopped parsley before serving.

  • Ground lamb can be used instead of beef for a richer flavor.
  • Add diced carrots or peas when cooking the onions for extra vegetables.
  • A small handful of golden raisins or chopped dried apricots can add a sweet contrast.
