Ingredients

  • 2 cups smooth peanut butter
  • 3/4 cup coconut flour
  • 1/2 cup maple syrup
  • 2 cups chocolate chips

Instructions

  1. Line a tray or large plate with parchment paper.
  2. In a mixing bowl, combine peanut butter, coconut flour, and maple syrup. Mix until a thick, workable dough forms. If too dry, add a splash of water or milk.
  3. Roll the dough into 1-inch balls and place on the prepared tray.
  4. Freeze for 10 minutes to firm up.
  5. Melt the chocolate chips in the microwave in 30-second intervals or over a double boiler.
  6. Dip each chilled ball into the melted chocolate using two forks to coat evenly.
  7. Place back on the tray and refrigerate for 20 minutes until the chocolate sets.

Notes

  • Use almond butter, cashew butter, or tahini for variations.
  • Swap maple syrup for honey or agave.
  • Mix in chopped nuts, coconut, or crisped rice for texture.
  • Top or roll in shredded coconut, pistachios, or cocoa powder for garnish.
  • For low-carb, use sugar-free chocolate and keto syrup.
