Ingredients

  • 1 ½ cups almond flour
  • ¼ cup natural peanut butter (or other nut/seed butter)
  • ¼ cup pure maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¼ cup mini dark chocolate chips

Instructions

  1. In a medium bowl, mix almond flour, peanut butter, maple syrup, vanilla, and salt until a dough forms.
  2. Fold in the mini dark chocolate chips.
  3. Use your hands or a small scoop to roll the dough into 1-inch balls.
  4. Place on a tray and refrigerate for 30 minutes until firm.
  5. Enjoy immediately or store in an airtight container.

Notes

  • For nut-free: use sunflower seed butter and seed-based flour.
  • Add vanilla protein powder for a protein boost (reduce almond flour by same amount).
  • If the dough is sticky, chill briefly or add more almond flour 1 tbsp at a time.
  • Customize with mix-ins like nuts, cacao nibs, or dried fruit.
