Ingredients

  • ½ cup Greek yogurt (plain or vanilla)
  • ¼ cup natural peanut butter (smooth or crunchy)
  • ¼ cup oat flour
  • 2 tablespoons honey
  • ¼ teaspoon baking soda

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, stir together Greek yogurt, peanut butter, and honey until smooth.
  3. Add oat flour and baking soda. Mix until a thick dough forms.
  4. Drop spoonfuls of dough onto the baking sheet. Flatten slightly with the back of the spoon.
  5. Bake for 8–10 minutes, until edges are lightly golden but centers are soft.
  6. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Don’t overbake—remove when centers are just set for a softer texture.
  • Use unsweetened peanut butter for better control over sweetness.
  • For gluten-free cookies, ensure oat flour is certified gluten-free.
