Ingredients

    • 1 cup almond flour
    • 2 tbsp maple syrup
    • 2 tbsp melted coconut oil
    • 1 tsp vanilla extract

 

    • Date Caramel:
    • 1 cup Medjool dates, pitted
    • 3 tbsp peanut butter
    • 1 tbsp maple syrup
    • 23 tbsp water
    • Pinch of salt

 

    • Nut Layer:
    • 1/2 cup roasted peanuts

 

  • Chocolate Topping:
  • 1 cup dark chocolate chips
  • 1 tbsp coconut oil

Instructions

  1. Line a 9×6-inch loaf pan with parchment paper.
  2. Mix almond flour, maple syrup, coconut oil, and vanilla into a sticky dough. Press evenly into the pan and freeze.
  3. In a food processor, blend dates, peanut butter, maple syrup, water, and salt until smooth. Spread over the chilled base.
  4. Sprinkle roasted peanuts evenly over the caramel and press lightly.
  5. Melt chocolate chips with coconut oil, then pour over the peanut layer. Spread evenly.
  6. Freeze 15–20 minutes until firm. Slice into 12 bars with a sharp knife.
