Ingredients

  • For the Cannoli Cream:
  • 2 cups whole milk ricotta cheese, well-drained
  • 8 ounces mascarpone cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup mini chocolate chips
  • 1 tablespoon finely grated orange zest
  • For the Layers:
  • 1 box graham crackers (1416 full sheets)
  • For Garnish:
  • 1/2 cup mini chocolate chips
  • 1/4 cup crushed pistachios

Instructions

  1. Drain ricotta in a fine mesh strainer lined with cheesecloth for at least 30 minutes (preferably 1 hour) to remove excess moisture.
  2. In a large bowl, beat drained ricotta, mascarpone, powdered sugar, vanilla, and cinnamon for 2–3 minutes until smooth and fluffy. Fold in mini chocolate chips and orange zest.
  3. Spread a thin layer of cannoli cream in the bottom of a 9×13-inch baking dish. Arrange a single layer of graham crackers on top.
  4. Spread a generous layer of cannoli cream over the graham crackers. Repeat layering crackers and cream, finishing with a final layer of cream.
  5. Cover tightly and refrigerate for at least 4 hours, preferably overnight.
  6. Before serving, sprinkle with mini chocolate chips and crushed pistachios. Slice and serve chilled.
