Ingredients

1 1/2 lbs cod (4 fillets)

1 cup grape tomatoes

1/4 cup breadcrumbs (use gluten-free if needed)

2 tbsp fresh parsley, chopped

1 tbsp fresh dill, chopped

1 tsp lemon zest

2 cloves garlic, crushed

Salt & pepper, to taste

Olive oil, for drizzling

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Add grape tomatoes to a baking dish, toss with olive oil, salt, and pepper, and roast for 10 minutes.
  3. In a small bowl, mix breadcrumbs, parsley, dill, garlic, lemon zest, salt, and pepper to form the herb crust.
  4. Season cod fillets with salt and pepper and place in the baking dish with the tomatoes.
  5. Sprinkle the herb crumb mixture over each fillet, pressing lightly so it sticks.
  6. Drizzle olive oil over the tops and bake for 15–18 minutes, until fish flakes easily with a fork.
  7. Optional: Broil for 2 minutes for extra crispiness.
  8. Finish with a squeeze of fresh lemon juice before serving.

  • Mix panko with breadcrumbs for extra crunch.
  • Add Parmesan to the crust for a richer flavor.
