Ingredients
1 chicken breast fillet
1 tbsp olive oil
1 tbsp butter
1 tsp fresh thyme or 1/2 tsp dried thyme
1 garlic clove, minced
Juice of 1/2 lemon
Salt and pepper, to taste
2 medium potatoes, peeled
1 tbsp butter (for potatoes)
2–3 tbsp milk or cream
1 garlic clove, minced or roasted (for potatoes)
1 small bunch broccolini
1 tsp olive oil (for broccolini)
Optional: 1 lemon slice (for garnish)
Optional: extra thyme (for garnish)
Instructions
Boil peeled potatoes for 12–15 minutes until tender. Drain and mash with butter, milk or cream, garlic, salt, and pepper. Set aside.
Season chicken with salt, pepper, and thyme. Heat olive oil in a pan over medium heat and sear chicken 4–5 minutes per side until golden.
Add butter, garlic, and lemon juice to the pan. Baste chicken and simmer briefly until sauce thickens slightly.
Steam or sauté broccolini in olive oil and salt for 4–5 minutes until tender-crisp.
(Optional) Sear a lemon slice in the pan until caramelized, 1–2 minutes.
Plate mashed potatoes, top with chicken and pan sauce, and arrange broccolini. Garnish with caramelized lemon slice and fresh thyme if desired.
Notes
Use chicken thighs for extra juiciness.
Add chili flakes for a hint of heat.
Swap broccolini with asparagus or green beans.
Use Yukon Gold or Russet potatoes for creamier mash.
