Ingredients

  • 1 packet active dry yeast
  • 1/2 cup warm water
  • 1/4 cup honey plus 2 tablespoons (divided)
  • 1/4 cup vegetable oil
  • 1/2 cup warm milk
  • 1 large egg
  • 1 large egg yolk
  • 1/2 teaspoon kosher salt
  • 3 cups bread flour (more as needed)
  • 1/4 cup unsalted butter, softened (for filling)
  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1 cup confectioner’s sugar
  • 1/4 cup honey (for glaze)
  • 2 tablespoons whole milk (for glaze)

Instructions

  1. In the bowl of a stand mixer, combine yeast, warm water, and 2 tablespoons honey. Let sit 10 minutes until foamy.
  2. Add vegetable oil, warm milk, egg, egg yolk, salt, and 2 cups flour. Mix with dough hook on medium speed until it begins to come together.
  3. Reduce speed to low and gradually add remaining flour until dough pulls from the sides and is smooth. Knead for 5 minutes.
  4. Transfer dough to a lightly oiled bowl, cover, and let rise for 1–2 hours until doubled in size.
  5. Turn dough onto floured surface and roll into a rectangle about 1/4 inch thick.
  6. Spread softened butter over the dough. Sprinkle evenly with brown sugar, cinnamon, and cardamom.
  7. Roll tightly into a log and slice into 1-inch pieces. Arrange on parchment-lined baking sheets, leaving space between. Cover and let rise 1 hour.
  8. Preheat oven to 350°F (175°C). Bake buns for 10–12 minutes until lightly golden.
  9. Let cool for 5–10 minutes.
  10. Whisk together confectioner’s sugar, 1/4 cup honey, and 2 tablespoons milk until smooth. Drizzle over warm buns and serve.
