Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup (113 g) melted butter
  • 2 cups (450 g) cream cheese, softened
  • 1/2 cup heavy cream
  • 1 cup chocolate chips

Instructions

  1. Line the base of an 8-inch (20 cm) springform pan with parchment paper and lightly grease the sides.
  2. Combine graham cracker crumbs and melted butter in a bowl. Press firmly into the base of the prepared pan. Chill in the fridge for at least 30 minutes.
  3. In a heatproof bowl, melt the chocolate chips with heavy cream until smooth. Let cool slightly.
  4. In a large bowl, beat the cream cheese until smooth and creamy.
  5. Spread the cream cheese mixture evenly over the chilled crust.
  6. Once the ganache has cooled to a pourable temperature, pour it over the cream cheese layer and gently spread to the edges.
  7. Chill for 4–6 hours, preferably overnight, until fully set.
  8. Release the springform pan, transfer to a serving plate, slice, and serve chilled.
