Ingredients

  • ½ cup oats, soaked in boiling water for 5 minutes or soaked overnight (40 g)
  • 2 tablespoons refined coconut oil or neutral oil such as avocado oil (14 g)
  • 1 cup cold filtered water (240 g)
  • 1 teaspoon vanilla extract (4 g)
  • 1 teaspoon maple syrup, or more for added sweetness (5 g)
  • Optional flavour mix-ins:
  • ½ teaspoon ground cinnamon (1 g)
  • 2 tablespoons cocoa powder (15 g) + 1 teaspoon mint extract (3 g)
  • ½ teaspoon pumpkin pie spice (1 g)
  • ½ teaspoon apple pie spice (1 g)

Instructions

  1. Drain and rinse the soaked oats thoroughly.
  2. Add the oats to a blender along with the water, coconut oil, vanilla extract, and maple syrup. Blend until fully smooth.
  3. Pour the mixture through a fine mesh strainer to remove any oat solids. Keep the strained liquid and discard the solids.
  4. If desired, add one of the flavor mix-ins and blend again until smooth.
  5. Adjust sweetness or texture with more maple syrup or water, blending as needed.
  6. Transfer to a food-safe jar or bottle and refrigerate.

Notes

  • Rinse oats thoroughly and avoid over-blending to prevent gumminess.
  • Separation is natural—shake well before each use.
  • The oil adds creaminess, but the recipe can be made without it.
  • Use a fine mesh strainer or nut milk bag for best texture.
  • To make thicker creamer, reduce water or add more oats.
