Ingredients

  • For the shrimp patties:
  • 350400 g shrimp, peeled and deveined
  • 1 small garlic clove, minced
  • 1 tbsp lemon juice
  • 1 tbsp mayonnaise
  • 1 tbsp dijon mustard (optional)
  • 2 tbsp breadcrumbs or crushed crackers
  • 1 tbsp chopped parsley
  • Salt and pepper to taste
  • 1 tbsp olive oil for cooking
  • For the guacamole:
  • 1 ripe avocado
  • Juice of 1/2 lime
  • 1 tbsp finely chopped red onion
  • 1 tbsp chopped cilantro or parsley
  • Salt and pepper to taste
  • Optional: pinch of chili flakes
  • For assembling:
  • 23 brioche or burger buns
  • Lettuce leaves
  • Tomato slices
  • Optional: sliced red onion
  • Optional: spicy mayo

Instructions

  1. Finely chop two-thirds of the shrimp into a paste, and the remaining third into small chunks for texture.
  2. In a bowl, combine all shrimp patty ingredients and mix well. Form into 2–3 firm patties.
  3. Heat olive oil in a pan over medium heat. Cook patties for 3–4 minutes per side until golden and cooked through.
  4. To make guacamole, mash avocado in a bowl, then stir in lime juice, red onion, cilantro or parsley, salt, pepper, and chili flakes if using.
  5. Lightly toast the burger buns in the same pan or under a broiler.
  6. Assemble burgers: spread guacamole on the bottom bun, add lettuce and tomato, then the shrimp patty. Top with more guacamole or spicy mayo, and finish with the top bun.

Notes

  • Chilling the patties briefly before cooking can help them hold shape better.
  • Use crushed crackers or panko if you don’t have breadcrumbs.
  • For extra spice, add hot sauce or diced jalapeños to the guacamole or shrimp mixture.
  • Guacamole is best fresh but can be stored with plastic wrap pressed on the surface to reduce browning.
