Ingredients

  • 1 teaspoon cornstarch
  • 2/3 cup water
  • 1 cup barbecue sauce
  • 6 tablespoons honey, divided
  • 2 tablespoons soy sauce
  • 1 tablespoon chopped garlic
  • 1 boneless skinless chicken breast, pounded to 1 inch thickness
  • 1 whole head garlic
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter, softened
  • 1 ball frozen pizza dough, thawed
  • 8 ounces fresh mozzarella cheese, shredded or sliced
  • 1 tablespoon honey (for drizzling)
  • 1 bunch green onions, thinly sliced (green parts only)
  • 1 tablespoon sesame seeds

Instructions

  1. Preheat oven to 350°F (175°C). Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30–40 minutes until soft and golden. Let cool.
  2. In a small bowl, whisk cornstarch and water until dissolved. In a saucepan, combine this with barbecue sauce, 5 tablespoons honey, soy sauce, and chopped garlic. Cook over medium-high heat until thick and bubbly. Remove from heat.
  3. Divide sauce in half. Use one portion for pizza sauce and the other to marinate chicken in a zip-top bag for 1–2 hours in the fridge.
  4. Cook the marinated chicken by grilling or pan-searing until fully cooked. Let rest, then slice thinly.
  5. Increase oven temperature to 400°F (205°C).
  6. Squeeze 3–4 roasted garlic cloves from the bulb and mash with softened butter.
  7. Roll out the pizza dough on a tray, shaping edges for a crust. Spread garlic butter evenly over the dough and crust.
  8. Spread reserved barbecue sauce over the dough. Add mozzarella, then sliced chicken.
  9. Bake for 15 minutes or until the crust is golden and cheese is melted and bubbly.
  10. Remove from oven, drizzle with 1 tablespoon honey, and sprinkle with green onions and sesame seeds. Slice and serve warm.

  • Use store-bought cooked chicken for a faster version.
  • Roasted garlic adds a mellow flavor, but fresh garlic can be used instead.
