Ingredients

  • 2 large chicken breasts
  • 1/2 cup dried cranberries
  • 2 tablespoons honey
  • 2 tablespoons balsamic glaze
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried rosemary
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup crumbled goat cheese
  • Fresh parsley, finely chopped, for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish with oil.
  2. Season chicken breasts on both sides with salt and black pepper.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken for 2–3 minutes per side until lightly golden. Transfer to the baking dish.
  4. Sprinkle cranberries and minced garlic over the chicken. Drizzle honey and balsamic glaze on top, then sprinkle with thyme and rosemary.
  5. Bake for 20–25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  6. Remove from oven and immediately top with crumbled goat cheese.
  7. Garnish with chopped fresh parsley and serve warm.
