Ingredients

  • pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • Kosher salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ⅓ cup honey
  • ¼ cup soy sauce or tamari
  • 1 tablespoon apple cider vinegar
  • Scallions, thinly sliced (optional, for garnish)

Instructions

  1. Pat chicken pieces dry and season with salt and pepper.
  2. In a small bowl, whisk together honey, soy sauce (or tamari), and apple cider vinegar.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear half the chicken until golden brown, about 4–5 minutes. Transfer to a plate and repeat with remaining chicken.
  4. Return all the chicken to the skillet. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Pour in the honey mixture. Simmer for 5–7 minutes, stirring often, until chicken is cooked through and the sauce is thick and glossy.
  6. Garnish with sliced scallions and serve hot.

Notes

  • Swap chicken for shrimp and reduce cooking time for a seafood version.
  • Add red pepper flakes or sriracha for heat.
  • Toss in steamed vegetables like broccoli or snap peas for a complete meal.
  • Serve with rice, noodles, or in lettuce wraps.
  • Use tamari for a gluten-free option.
