Ingredients

  • For the Honey-Glazed Drumsticks:
  • 6 chicken drumsticks
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • For the Garlic Butter Veggies:
  • 2 cups broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced zucchini
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Soft Rolls:
  • 4 soft dinner rolls
  • 1 tablespoon melted butter (for brushing)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix honey, soy sauce, olive oil, lemon juice, minced garlic, paprika, salt, and pepper.
  3. Coat drumsticks in the marinade and let sit for 15–20 minutes (optional).
  4. Place drumsticks on the baking sheet and spoon extra marinade over top.
  5. Bake for 35–40 minutes, turning halfway and brushing with remaining marinade until golden and cooked through.
  6. Meanwhile, melt butter in a skillet over medium heat. Add garlic and sauté for 30 seconds.
  7. Add broccoli, carrots, and zucchini. Season with salt and pepper and cook for 8–10 minutes until tender but vibrant.
  8. Warm soft rolls in the oven for 3–4 minutes, then brush with melted butter.
  9. Serve hot drumsticks with garlic butter veggies and a soft roll on the side.

Notes

  • Add chili flakes to the glaze for a sweet-spicy kick.
  • Use chicken thighs if preferred—adjust cook time slightly.
  • Swap in your favorite vegetables based on what’s in season or available.
  • Squeeze fresh lemon over veggies before serving for brightness.
  • Thicken leftover glaze on the stovetop for an optional drizzle.
