Ingredients

  • 1 heaped cup amaretti biscuits, crushed
  • 2 tablespoons butter, melted
  • 2 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 tablespoons toasted flaked almonds
  • 10 fresh figs
  • 3 tablespoons honey
  • 3 tablespoons clementine or orange juice
  • 1 cinnamon stick
  • 1 star anise
  • 1/2 cup mascarpone cheese or 1 cup vanilla ice cream
  • 2 tablespoons fresh mint leaves, finely chopped
  • Extra whole mint leaves for garnish

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking tray with baking paper.
  2. Cut a cross into the top of each fig about two-thirds of the way down and gently squeeze the base so the tops open slightly. Arrange the figs in a shallow ovenproof dish.
  3. In a bowl, mix the crushed amaretti biscuits, melted butter, flour, sugar, and toasted flaked almonds until crumbly.
  4. Spoon about 1 teaspoon of the crumble mixture into the center of each opened fig.
  5. In a small saucepan, combine the honey, clementine or orange juice, cinnamon stick, and star anise. Heat gently until the mixture is hot and almost simmering, then remove from heat.
  6. Drizzle half of the warm syrup over the figs and reserve the rest for serving.
  7. Roast the figs in the oven for 10–15 minutes until the crumble topping is golden and the figs are soft and caramelized.
  8. Remove from the oven and let them cool slightly. Drizzle the remaining syrup over the figs.
  9. Serve warm with mascarpone or vanilla ice cream and sprinkle with chopped mint. Garnish with whole mint leaves.

  • Fresh figs work best as they soften and caramelize beautifully during roasting.
  • Chopped pistachios or hazelnuts can replace almonds for a different nutty flavor.
  • Greek yogurt can be used instead of mascarpone for a lighter option.
