Ingredients

  • 100 g whole-wheat noodles
  • 2 teaspoons sunflower oil
  • 125 g purple sprouting broccoli or Tenderstem broccoli, cut into short lengths
  • 100 g sugar-snap peas, halved
  • 4 spring onions, cut into short lengths
  • 2 tablespoons reduced-salt soy sauce
  • 175 g lean rump steak, thinly sliced
  • 2 teaspoons sesame seeds
  • 2 tablespoons clear honey

Instructions

  1. Bring a large pan of salted water to a boil. Cook whole-wheat noodles until just tender. Drain and rinse under cold water.
  2. Heat 1 teaspoon sunflower oil in a wok over medium-high heat. Add broccoli, sugar-snap peas, and 2 tablespoons water. Cover and steam-fry for 3 minutes.
  3. Remove lid, add spring onions, and stir-fry for 2 minutes. Add noodles and half the soy sauce. Toss together and divide between 2 bowls. Keep warm.
  4. Wipe the wok clean. Heat remaining oil until nearly smoking. Add sliced beef and stir-fry for about 2 minutes, letting it sear before stirring.
  5. Add sesame seeds and stir-fry for 1 minute more. Stir in honey and remaining soy sauce, and cook briefly until the sauce is glossy.
  6. Spoon the beef and sauce over the noodle bowls and serve immediately.
