Ingredients

  • 1 cup (150 g) sesame seeds
  • 1/2 cup (170 g) pure honey
  • 1/4 cup (50 g) granulated sugar
  • 2 tablespoons (30 ml) water
  • 1 tablespoon (14 g) unsalted butter
  • 1 teaspoon (5 ml) fresh lemon juice
  • 1/8 teaspoon fine salt

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. Toast sesame seeds in a dry skillet over medium heat for 3–4 minutes until golden and fragrant. Set aside.
  3. In a heavy-bottomed saucepan, combine honey, sugar, and water. Stir over medium heat until sugar dissolves.
  4. Increase heat slightly and boil without stirring for 6–8 minutes until the mixture is deep amber in color.
  5. Remove from heat and quickly stir in butter, lemon juice, salt, and toasted sesame seeds.
  6. Immediately pour onto prepared baking sheet and spread thinly with a heatproof spatula.
  7. Let cool completely at room temperature for about 20 minutes.
  8. Break into pieces and serve or store.
