Ingredients

  • Shrimp and batter:
  • 1 lb jumbo shrimp, peeled and deveined
  • 4 large egg whites
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2/3 cup cornstarch
  • 1 cup vegetable oil, for frying
  • Sauce:
  • 1/4 cup mayonnaise
  • 3 tbsp sweetened condensed milk
  • 2 tbsp honey
  • 1 tbsp freshly squeezed lemon juice
  • Candied walnuts:
  • 1/2 cup walnut halves
  • 3 tbsp white granulated sugar
  • 1 tbsp cold water
  • Garnish:
  • 1 green onion, finely chopped

Instructions

  1. Whisk mayonnaise, sweetened condensed milk, honey, and lemon juice in a bowl. Set aside.
  2. In a non-stick pan over medium heat, stir sugar and water until thickened. Add walnuts and coat. Transfer to parchment to cool.
  3. Season shrimp with salt and pepper. Whisk egg whites until foamy, then stir in cornstarch to form batter. Coat shrimp in batter.
  4. Heat oil to 350–375°F. Fry shrimp in batches for 2–3 minutes until golden and crispy. Drain on a rack or paper towels.
  5. Toss shrimp with sauce and candied walnuts in a large bowl. Garnish with green onion and serve immediately.

  • Reduce honey and increase lemon juice for less sweetness.
  • Toasted sesame seeds make a great garnish.
