Ingredients

  • 2 cups water
  • 2 cups uncooked long-grain white rice
  • 1 can (10 oz) cream of chicken soup
  • 1 can (10 oz) cream of mushroom soup
  • 2 cups cooked chicken, shredded
  • 1/4 cup unsalted butter
  • 1 cup milk
  • 1 small white onion, finely chopped
  • 16 oz broccoli pieces (fresh or frozen)
  • 2 cups cheddar cheese, shredded

Instructions

  1. Preheat oven to 350°F (175°C). Cook rice in water according to package directions and set aside.
  2. In a large 9×13-inch baking dish, combine cooked rice, shredded chicken, cream of chicken soup, cream of mushroom soup, butter, milk, onion, and broccoli. Mix well.
  3. Stir in 1 cup of shredded cheddar cheese.
  4. Bake for 30–35 minutes, until hot and bubbly.
  5. Sprinkle remaining 1 cup of cheddar cheese over the top and bake for an additional 5 minutes until melted.
  6. Remove from oven and let rest for 5 minutes before serving.
