Ingredients

  • 1 1/2 cups ripe mashed banana (about 3 to 4 medium bananas)

  1. Preheat the oven to 325°F (163°C). Grease and line a 9×5-inch loaf pan with parchment paper, leaving overhang for easy removal.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until thick and smooth.
  4. Add the mashed bananas and mix until fully combined.
  5. Whisk in the eggs one at a time, then add the Greek yogurt and vanilla extract. Mix until smooth.
