Ingredients

  • Shortbread base and crumble:
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Chocolate filling:
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup sweetened condensed milk
  • 1 pinch salt
  • Raspberry topping:
  • 1/2 cup raspberry jam (seedless or with seeds)
  • 1/4 cup fresh raspberries, lightly crushed (optional)
  • 2 tablespoons semi-sweet chocolate chips for topping

Instructions

  1. Preheat oven to 175°C (350°F). Line an 8×8 inch baking pan with parchment paper, leaving overhang.
  2. Cream butter and sugar in a large bowl until light and fluffy.
  3. Add flour, salt, and vanilla; mix until crumbly dough forms.
  4. Press two-thirds of the dough into the pan to form an even base.
  5. Bake for 10 minutes, then cool slightly.
  6. In a small saucepan, melt chocolate chips, sweetened condensed milk, and salt over low heat until smooth.
  7. Spread chocolate evenly over the warm crust.
  8. Spoon raspberry jam over the chocolate and swirl gently. Add fresh raspberries if using.
  9. Crumble the remaining dough over the top. Sprinkle with extra chocolate chips.
  10. Bake for 25–28 minutes until the top is lightly golden.
  11. Cool completely before lifting from pan and slicing into bars.

Notes

  • Omit fresh raspberries if using only jam.
  • Chill dough if it’s too soft from warm butter.
  • Use dark chocolate for a richer flavor.
  • Substitute gluten-free flour blend to make it gluten-free.
  • These bars make great gifts and travel well when wrapped properly.
