Ingredients

  • 4 tablespoons unsalted butter, melted and cooled, plus extra for greasing the pan
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 2 large egg yolks
  • 1 can (14 ounces) sweetened condensed milk
  • ½ cup fresh lemon juice (about 3 medium lemons)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease an 8×8-inch baking pan with butter.
  2. In a medium bowl, mix graham cracker crumbs and sugar. Add melted butter and stir until the mixture resembles wet sand.
  3. Press crust mixture evenly into the bottom of the pan. Bake for 8–10 minutes until lightly golden. Cool slightly.
  4. In another bowl, whisk egg yolks. Add sweetened condensed milk and lemon juice, whisking until creamy and smooth.
  5. Pour the lemon filling over the warm crust and spread evenly.
  6. Bake for 12–15 minutes, until the center is set and no longer jiggles.
  7. Cool at room temperature, then refrigerate for at least 2 hours before slicing into squares.
